How did you spend Earth Day, yesterday, April 22, 2015?
My day began with a refreshing green smoothie. Similar to my RRS~Refreshing Recharge Smoothie recipes in Make Every Bite Count. I like blending citrus and greens, sometimes with some frozen strawberries, a little ginger, and possibly flax seeds. A few dates can be added for sweetness.
I made this one with a small local white grapefruit, and a mammoth sized navel orange, plus the rest mentioned above. The kale and oranges provide a blend of nutrients, including calcium and iron. Although, vitamin C rich foods help improve the absorption of the iron, while blocking the calcium.
