Sunday is our Fun Day. A perfect morning for a bit of sweet, salty and savory to start out the day. The Tofu & Purple Sweet Potato ‘Hash’ delivered on all fronts. It is my adaptation of the Cinnamon Tofu from Virginia Messina’s Vegan For Her. I thought I had written the recipe down, and no longer had a copy of the book on hand, so I had to wing it and create my own version. I am sure her Cinnamon Tofu is delicious, but my Tofu & Purple Sweet Potato late Sunday breakfast served with whole wheat raisin bread and sunflower butter certainly started our Sunday Fun Day out right!
