What I love most about EG, and the Earth Girl Diet, is the fact that while she knows the importance of eating a healthy diet, she still knows how to have fun.
She eats a plant-based diet, but is less hung up on the latest dietary trends, rules and buzz words, associated with everyone’s food choices these days like ‘clean’ ‘gluten-free’ ‘soy-free’ ‘super food’ or other popular food trend.
Her diet is pretty much a clean or even gluten-free (if needed) naturally, in that it is centered around an abundance of fresh produce, whole grains, beans, fruits, nuts and seeds. She may eat a (vegan) hot dog here and there, but even that is still ‘clean’ compared to the animal based version. If she has a sensitivity to a particular food, she just doesn’t eat it. She doesn’t automatically believe any of these foods are inherently bad for every one, which is the main difference.
Animal foods, especially something like a hot dog is not a clean food. It contains (legally) lots of animal parts and really yucky bad crap. Raising animals as we are is definitely not clean for the environment either. Pig and cow waste is a huge problem. The nasty pools of waste water also end up back in the food supply, getting sprayed on other crops while irrigating. It is not clean in terms of the resources used either. But, that’s enough of all that.
A vegan hot dog is an ideal alternative, especially for kids, or the kid in all of us. It uses far less resources to produce, and the ingredients on the package are far cleaner in every which way than the animal counter part.
EG isn’t focused on perfection and rules. She likes to take big bites out of life, enjoy fun foods. She worries less, and doesn’t over analyze her every bite.
As such, sometimes, nothing beats a little peanut butter sandwich. Here is Earth Girls’ version. It begins with a fresh batch of Don’s steamed buns. This time with some added flax seeds. You can check out our YT video to learn how to make these yummy buns.
Next, add a light spread of your favorite nut or seed butter. The peanut butter jar was near empty, hence the lightest to carry in our lunch pack to our office. If you want to keep fat/nut intake low, just use a light light spread. Open up a couple Medjool dates, de-pit, and place them around the bun. Top with kale. Eat with carrot sticks. Voila!
